About This Tea

Japanese tea name: かぶせ茶

Young spring first-harvest leaves are partially shade grown to produce a beautiful emerald jade liquor with umami. This Kabuse from the southern Japanese island of Kagoshima results in a tea high in theanine. Though not as complex and fully robust as a Gyokuro, it still results to a terroir and labor intensive tea which produces a unique sweetness with a brilliant nuance. Recommended steeping: 1 Tablespoon | 5g : 140F | 60C : 6oz | 180ml Brew 3-4 min.

This Kabuse tastes like the first moments of spring. The emerald-jade color of the liquid brings to mind images of renewal and growth. I especially enjoyed the balance of sweetness and round, lingering umami. The leaves are too good to waste! After steeping, I tossed the unfurled leaves with a little bit of soy sauce and sesame oil (rice vinegar works well too!) and served on top of a bowl of rice.
